Here's my favorite way to cook up a thawed-out roast:
Simply Roast'd Beef
- Pre-Heat the oven to 450 degrees.
- Prep the roast by making 4-5 slits in the roast and filling them with slivers of garlic.
Generously salt and pepper all surfaces of the roast.
Put the roast in the oven for 10 minutes until nicely browned (seared).
Add the sliced onions, cover, and reduce the temperature to 250 degrees.
Roast until an instant-read thermometer reads 115-125 for rare, 125-130 for medium-rare, or 135-145 for medium (20 to 30 minutes per pound). **Watch closely. I am used to roasting 5# roasts, so these smaller roasts may finish more quickly than the times I am used to. Let stand for 15 to 20 min. before slicing, in order to retain the juices in the meat.
