Authentic home-made sourdough bread made with einkorn flour, ground the day I make the bread.
Einkorn is an ancient grain, a ancestor of modern wheat. It is reported that it is easier to digest due to gluten that is somewhat less strong. Also, the fact that the bread is a true sourdough aids in the digestibility of this bread.
It takes a couple of days to make sourdough bread, so you'll need to call for availability. I keep only a small amount in the freezer at a time, to ensure that it is as fresh as possible.
